Apple, Pumpkin Seed Muffins

Apple Pumpkin Seed MuffinsWhen the Fall season arrives we are blessed with an abundance of pumpkins (which come with a bonus, pumpkin seeds).  I thought I’d put this recipe out there now to get you thinking ahead about not throwing out those tasty and nutritious seeds.  Its a lot of work to wash, roast and shell the nutrient dense pumpkin seeds, so if you are not up for it, you can buy the seeds at the store.  (I definitely do!)  Also, you can use any type of apple in this recipe.

  • 2 cups whole-wheat flour
  • 1 tbsp. baking powder (aluminum free)
  • ¼ cup cane sugar
  • 1 tsp. cinnamon
  • ½ tsp. cardamom
  • ½ tsp. nutmeg
  • ¼ tsp sea salt
  • 1 egg
  • 1 cup apple juice
  • ¼ cup coconut oil, melted
  • 2 apples, unpeeled, grated and seeded  (1 cup)
  • ½ cup pumpkin seeds
  • 3 tbsp. maple syrup
  1. Heat oven to 375 F.
  2. Combine the flour, cane sugar, baking powder, salt, cinnamon, nutmeg, and cardamom and mix well.
  3. In a large bowl, blend together egg, apple juice and oil.
  4. Add dry ingredients to wet ingredients and stir until just combined – do not over mix.
  5. Stir in grated apples and pumpkin seeds
  6. Scoop batter into 12 – med. muffin cups and top with a few pumpkin seeds.
  7. Bake in oven for 25-30 minutes.
  8. While the muffins are cooling baste with maple syrup.
